Hello, I’m Nosheen, the founder of Nosh Bakes, a UK expat with a love for cooking and all things creative. You could say I was always meant to be in the food business (it’s in the first syllable of my name 😉).
I moved to the island four years ago, originally from an IT background, before transitioning into content creation for brands. That creative journey eventually led me to launch my home-baking business in 2023. I’m deeply grateful for the support and love I’ve received along the way, it’s what continues to motivate and inspire me every day.

How to Make Choux Pastry (Pâte à Choux)
Ingredients:
Choux Pastry
1/2 cup (8 Tbsp; 113g) unsalted butter, cut into 8 pieces
1/2 cup (120ml) water
1/2 cup (120ml) 2% or whole milk
1/4 teaspoon salt
2 teaspoons granulated sugar
1 cup (125g) all-purpose flour (spooned & leveled)
4 large eggs, beaten
egg wash: 1 egg beaten with 1 Tablespoon milk or water
METHOD
1️⃣ Make the Dough
1. Heat butter, water, milk, salt & sugar in a saucepan until melted and gently simmering.
2. Reduce heat. Add flour all at once and stir until a smooth dough forms and pulls away from the pan.
3. Cook for 1 minute, pressing dough against the pan.
4. Transfer to a bowl and cool 2–3 minutes.
2️⃣ Add Eggs
5. Mix on low speed, adding eggs in 3–4 additions, mixing well after each.
6. Stop when dough is smooth, glossy & pipeable (you may not need all the egg).
**Dough can be used immediately or refrigerated up to 3 days.

BAKING
• Preheat oven to 400°F / 204°C
• Line trays with parchment and lightly brush with water
7. Pipe 2-inch mounds, spaced 3 inches apart.
8. Smooth peaks with a damp finger and lightly brush with egg wash.
Bake:
• 20 min at 400°F (204°C)
• Reduce to 350°F (177°C) and bake 10–15 min until golden
⚠️ Do not open oven during baking.
Cool completely before filling.
